Kiwi Basil Sparkling Water

Making a puree with fresh kiwis is one of the simplest ways to add flavor to sparkling water and make yourself a quick mocktail. Staying hydrated doesn't have to be one-note and kiwis have a lot to offer. Ripe kiwis are delightfully sweet, they have this acidity that is a cross between that of an underripe strawberry and pineapple and their delicate texture yields a puree that melds well with water instead of sinking to the bottom of the glass. The key to imparting as much kiwi flavor as possible is not straining the puree. You want the pieces of flesh as well as the seeds because that is where most of the flavor is. All that fresh kiwi flavor is joined by basil's anise-like taste and pungent sweet smell. Cutting the herb into ribbons, also known as chiffonading, releases the basil's essential oils which release both flavor and aroma into the water. 

Mocktail Ingredients

Serves 8

  • 4 kiwifruits

  • 2 liters sparkling water

  • 4 fresh basil leaves, cut into fragrant ribbons

 

Kiwi Basil Sparkling Water Mocktail Directions

  1. Cut off the ends of each kiwi then peel.

  2. Cut in half.

  3. Process until smooth. Add a splash of water if needed.

  4. Pour the sparkling water into a pitcher.

  5. Add the unstrained puree and basil. Stir.

  6. Refrigerate for 30 minutes then enjoy.
