What is verjus? Verjus is the pressed juice of unfermented wine grapes. Full bodied, with a mouthfeel comparable to wine, Wölffer is bright, tart, and quite literally mouthwatering, with strong notes of gooseberry and green apple. Gently acidic, it is not as sour as lemon or lime juice, so can be used generously as the base for cocktails.
